Canned tuna isnt just good for tuna melts and cat food, canned tuna can be an affordable staple for a large family. This recipe is great for sneaking in the good stuff your kids need and can be altered in several ways to your taste.
Ingredients:
2 Cans of tuna in water drained
1 1/2 Cups plain bread crumbs(or you can try other variations)
1 Egg
2 Tbsp of mayo (or creamy ceasar dressing is a good alternative for more flavor)
1-2 Tbsp of Basil (dried or fresh)
1 Tbsp Mustard
1/2 Cup of Colby/Jack Cheese
Salt and Pepper to taste
Drain and add tuna, bread crumbs, and egg to a medium-large mixing bowl mixing until incorperated. Then add the rest of your ingredients and let sit in the refrigerator for 5 minutes.
Heat up a greased skillet to medium heat. Use an icecream scope to scope tuna mix in balls and place in skillet and flatten with a spatula. Let cook for about 3-5 minutes on each side or until golden brown. And your done! Quick and easy.
These would be great with a horseradish sauce...
Ingredients:
1 cup mayonnaise
2 Tbsp prepared horseradish
2 Tbsp fresh lemon juice
1/8 teaspoon freshly ground black pepper
2 Tbsp prepared horseradish

Mix all the ingredients and refrigerate!
