The great thing about this dish is that its cheap, quick, and easy to make. No crazy expensive household gadgets or foreign cheese and sauces that no one can pronounce let alone afford. And deceptively delicous is an added bonus, my three very picky eaters loved it!
Ingredients:
1lb. Chicken Breasts
2 Cups Uncooked Penne
6oz. Bag of Spinach
1Tbsp Basil (I prefer fresh)
1 Clove of Garlic diced
1 Jar Spaghetti Sauce
1 Can of Diced Tomatoes drained
3oz. Neufchatel Cheese
1/2 Cup Colby/Jack Blend Cheese
Salt to Taste
Parmesan Cheese to Taste
First, cook your chicken in a large skillet and dice into small chunks. Return to the pan and add your basil, garlic, spaghetti sauce and drained diced tomatoes over med-high heat. Bring this to a boil then let simmer.
Meanwhile start your penne according to the box directions leaving out salt until the end. Be sure to use a larger pot for the spinach you'll be adding later. At the very last minute of the penne boiling add the bag of spinach and cook down, turning it into the penne. When it has finished cooking down drain the pasta and spinach and add to your chicken and sauce mixture.
Add you Neufchatel cheese in chunks stirring until incorperated. Add your colby blend cheese, salt to taste, and let simmer for about 15 minutes. Plate and add parmesan cheese to taste and you have yourself a healthy easy dinner!
